My iced tea is darker here in Utah than it was in Florida. Why?
Answer:
It has to do with the amount of iron in our water. Here in Utah, we have well water which has a lot more iron than the water in Florida had. The iron combines with tannic acid in the tea to form iron tannate, which gives the tea its dark color. Adding lemon juice breaks down the iron tannate, and gives the tea a lighter color.
