
The mustard plants in my garden are still green, in spite of sub zero temperatures and snow.  How do they survive when most of the other plants have not?
Answer:
Some plants avoid freeze damage by concentrating sugars and other soluble chemicals in their cells.  It is not enough sugar to give the plant a sweet taste, but it acts like like the anti-freeze in your car, keeping the cell from suffering freeze damage.
